Today, I’m getting ready for a busy week at work. One thing that really helps me is prepping food for my husband’s breakfast for the week. Since he has type 2 diabetes, finding something that wouldn’t affect his blood sugar negatively has been trial and error. Our go-to for the past year has been whole wheat-blueberry pancakes. I make a batch on Sunday mornings and freeze.
Here is the very easy recipe :
2 cups whole wheat flour
4 1/2 tsp baking powder
2 Tbsp cinnamon
3 Tbsp sugar
2 cups plus 4 Tbsp milk
2 tsp vanilla
1 pint blueberries
In a medium bowl, combine dry ingredients. In a large bowl, whisk wet ingredients. Add dry ingredients to wet, and stir just until well combined. Fold blueberries in gently.
I also add chia or flax seeds sometimes for a little variety
